Freeze-drying works by freezing food solid, then using a vacuum to convert the ice inside it directly into vapor — a process called sublimation. This removes almost all the moisture without cooking or changing the flavor. That’s why freeze-dried treats are extra crunchy, lightweight, and intensely delicious.
